My first attempt at a sponge cake

What do you do when you’re stuck at home because of a terrible back pain but still have energy to release? Yes, you bake!… Ok, maybe I’m the only one, but I really wanted to try to make a sponge cake.

I was craving a strawberry cake for days but was afraid to go to a bakery because of my back. I know it’s not a big deal, but the thing is: every time I go out “only for something quick” I walk the entire city. I felt safer at home.

For this recipe, all the ingredients are very simple and easy to find in our pantry. The recipe I followed is for an 8 inch pan but I divided it into five 6 inch pans and I now I think it my layers were too short. Maybe I’m gonna try to make 1.5 x the recipe the next time.

Simple Sponge Cake

Ingredients

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 cup butter softened
  • 1 cup confectioners’ sugar
  • 2 large eggs eggs room temperature
  • 1 teaspoon vanilla extract
  • ½ cup milk room temperature

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Sift the flour and baking powder into a medium bowl and set aside.

  3. Beat butter and sugar with an electric mixer until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Beat in vanilla. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Pour batter into prepared pan.

  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 20 minutes. Cool the cake in the pan for 10 minutes, then turn the cake out onto a wire rack to cool completely.

  5. This cake can be served as is, just dusted with confectioners' sugar. Alternately, cut the cake in half horizontally and sandwich the layers together with jam or custard.

To fill the cake I used a Betty Crocker™ Vanilla Rich & Creamy Frosting mixed with some strawberries. Simple as that!

As I said, the cake didn’t rise as I expected but it was delicious. It took me less than 45 minutes to prepare it and it made our day! I’m gonna perfect this recipe (aka trying it with real milk) and tell you how it went!
