Continuing our Brunch at Home series today, I want to share with you my latest Sunday adventure: Spanish Eggs. I can’t think of any other recipe easier or quicker than this one to elevate our Sunday brunch.
You can prepare it in 5 minutes and it’ll be done in 15! The best part? You probably already have all the ingredients for this dish.
Spanish Eggs
Ingredients
- 1 can Tomatoes
- 1/2 Onion
- 2 cloves Garlic
- Paprika
- 4 Eggs
- 25 g Olives
- Parsley
Instructions

Small dice onion and garlic.

After both are transparent, add a can of tomatoes and season with paprika and salt to taste.

Let it cook for about 5 minutes.

Place the tomatoes on a baking dish. Make 4 holes between the tomatoes and add an egg to each one of them.

Toss some sliced olives over it.

Bake it for 10 minutes at 375ºF.

Finish with parsley.

Serve it with bread.
