I made an easy and delicious brunch at home

HOME BRUNCH

Quarantine has changed our lives a lot, but to be honest, for me the biggest impact was on my weekends. As I already work from home, I usually leave my house on Saturdays and Sundays.

And if you follow my posts already, you know brunch is our favourite thing to do on weekends and that’s when I discover new cool places in Toronto.

So since the covid-19 situation I’m getting more creative and trying to enjoy our home the best I can trying new recipes, making some DIYs and even starting my Youtube Channel.

I always prepare something on sunday mornings but last weekend I was kinda inspired and cooked a little more. As the result was a delicious and yet simple dish to make, I thought it would be a good idea to share my experience with you.

I started baking potatoes. I cut them into little bite sizes and seasoned them with salt, black pepper and oregano (I think it would be even more delicious with rosemary but I didn’t have it at home). I baked them for 18 min in 450ºF.

I grilled an Italian sausage I had in my fridge to add some “heat” to my dish. And the most fun part was cooking the eggs. I cut two slices of orange bell pepper (about 1/2 inches wide) and cracked the eggs inside them. I seasoned them with salt, pepper and parsley at the end.

To finish my dish, I drizzled some arugula and lettuce sleeves with olive oil.
