Shrimp Sandwich (Air Fryer super easy recipe)

I’m so in love with my air fryer! We’ve been testing some simple recipes (well, that’s an air fryer mission: to uncomplicate the food preparation right?) and using the “resources” we already have in the fridge.

This past week we decided to make shrimp sandwich with a frozen coconut shrimp we had left from some TV Sunday night. Like almost everything I’ve been prepared in this quarantine period, we try to make some magic with what we’ve already got.

The idea came up so well that I believe this “dish” will be made frequently in our kitchen from now on. It’s so easy to make, you’re gonna love it too!

You just need:

  • 1 pound of frozen breaded shrimp (or you can see my tip below if you want to prepare it at home)
  • 2 buns
  • 2 TB of mayonnaise
  • As much as you like of sriracha (or any hot sauce you have)
  • Some greens from your fridge (lettuce, spinach, arugula…)

But you can use any other brand you have access to or even prepare your own shrimp.

If you want to prepare your own coconut shrimp you only need to dip shrimp in all purpose flour, then egg and then in a mix of bread crumbs and shredded coconut (optional).

I sprayed the shrimp with olive oil and cooked it in the air fryer for 10 minutes, 400ºF.

I mixed mayonnaise with sriracha and spread it on the bun. Added some greens I had in my fridge and top it with the cooked shrimps.

Super easy, right?
