

This year Valentine’s Day is on a Sunday so I thought it would be a great idea to share a brunch inspiration. It doesn’t take too much time to prepare it and you don’t need a lot of ingredients.

Valentine’s Day Brunch
Ingredients
- 2 Slices Bread
- 2 Eggs
- 1 Avocado
- 100 g Cherry Tomatoes
- 50 g Greens
Instructions

Halve the tomatoes and place them on a parchment paper sheet.

Drizzle with Olive Oil and season with salt and pepper to taste.

Bake for 10 minutes at 400ºF.

Cut a slice of bread using a heart-shaped cookie cutter.

In a pan, crack an egg in the middle of the bread. Season it with salt and pepper to taste.

Slice the avocado.
Serve everything together on a plate with greens. You can drizzle more olive oil over it or even use the tomato juice as a dressing for the greens.
